These fruits are renowned for their aromatic profile and are often considered the best olives for eating.

Natural ingredients of excellent quality
As you know, all our pure pork sausages are made from meat labeled "French Pork" . It comes from responsible farms, with animals that benefit from healthy and natural food. By selecting our products directly from the farms, we ensure their quality at the source. In addition, our master butchers exclusively use the finest cuts .
The meat has a nice marbled taste, and this flavor is enhanced by the black olives. They are classified AOP (Protected Designation of Origin) . This means that the entire olive production process is done in Nyons, in accordance with the traditional know-how specific to this locality.
And to top it all off, we add carefully measured aromatic plants and spices.
This mixture is then stuffed into natural casings, tied by hand, and then left to steam. Then, for 3 to 5 weeks, each sausage will slowly develop its aroma until it matures. The chorizo has taken on its beautiful rust color that makes it so appetizing.
