An integral part of Corsica's culinary heritage, Corsican charcuterie invites you on a rich and refreshingly different tasting journey. Guardians of the traditions and know-how of the Isle of Beauty, Corsican saucisson and Corsican charcuterie have always stood apart thanks to their age-old production method.
When Corsican charcuterie is made in the traditional way, it reaches the market in two quite distinct seasons:
- The so-called "fresh" season, from November to March, after the nustrale pigs are slaughtered. During this period, it is mainly figatelli saucisson, Corsican saucisson or fresh lonzo that is made.
- The "dry" season, from April to September, when we find a range of Corsican charcuterie requiring additional curing time: dry coppa and lonzu, matured Corsican saucisson.
Artisan Corsican charcuterie online: the secret of its flavours lies in how the pigs are raised
True Corsican charcuterie has its origins in the mountains of the island's interior. These mountains, rich in charcuterie traditions, embody Corsica's gastronomic heritage.
In the past, good Corsican charcuterie began with the choice of pig breed used to make the Corsican saucisson. These Corsican pigs, also called "nustrale" pigs (literally "ours"), are a breed endemic to the Isle of Beauty. Raised semi-free in the maquis, they feed on chestnuts, acorns, fresh grasses, roots and ferns, alongside the feed provided by the farmer. This diet gives the meat its distinctive flavour.
It is during the final stage of rearing, known as "finishing", that the pig develops the very particular fat we find in Corsican charcuterie such as lonzo or coppa. It is during this finishing stage, usually in autumn, that the pig feeds exclusively on acorns and chestnuts, giving the fat a fruity, marbled character.
Although Corsican charcuterie is traditionally made from these famous Corsican pigs, there are unfortunately not enough nustrale pigs on the Isle of Beauty to satisfy every lover of Corsican charcuterie on the mainland.

The essential Corsican saucisson: the figatellu
The jewel of Corsican gastronomy, the figatelli is a sausage made from liver, meat, lean pork and pork fat. Dried for several months, the figatelli sausage can be eaten cooked, roasted over a wood fire, or raw as an apéritif. Cooked, the figatellu releases aromas of garlic, notes of spice and wine.
The lonzu
Made from pork loin, the Corsican lonzu saucisson is recognisable by the thick layer of fat that makes up ⅓ of each slice. It is this distinctive, flavour-packed fat that gives the Lonzo saucisson its smoky, nutty brown-butter taste.
Corsican coppa
Made from the pork neck, Corsican coppa is characterised by its fine, round and unctuous slices. Salted and dried in a natural casing, coppa from Corsica is peppered on the surface after the salting stage. When cut, the slice reveals a perfect balance between subtle marbling of fat and lean pork.
