Corsican charcuterie was originally made from the meat of “nustral” pigs, an endemic breed raised in semi-freedom in the maquis. Today, the number of pigs supplied by the island is no longer enough to satisfy fans of Corsican sausages throughout France. But out of respect for tradition, we only select 100% French meat, with pigs born, raised and processed in France. To make our Corsican wild boar sausage, we use fresh wild boar loin, a choice piece to bring out all the flavor of this local charcuterie.
