The origin of artisanal nougat, an oriental delicacy

Nougat , which is now part of the culinary heritage of the Mediterranean region, has its origins in the Middle East. The first written record of nougat dates back to the 10th century . The recipe for this confectionery is mentioned in an Arabic book under the name " native ". It would then have originated from a locality located in southern Turkey.

Over time, similar recipes have been found in different parts of the world, from Spain to Algeria, Egypt and Iran. The name may change, but the basis remains the same. How is old-fashioned Ardèche nougat made?

Traditional nougat is made from egg, almonds and honey. Ardèche nougat contains honey from Provence and carefully selected almonds.

The honey is heated, while the sugar is cooked and then mixed with glucose syrup . These elements are prepared separately in copper cauldrons. The honey is then mixed with the egg white beaten until stiff, whisking everything together. The dough begins to rise, and the nougatier adds the sugar and syrup. Cooking continues until the mixture becomes thick and sticky.

Dried fruits are added at this point. In the traditional recipe, these are toasted and then crushed almonds.

The nougat is then placed between two sheets of wafer paper so that it does not stick together, then left to cool. It is then cut into bars or smaller pieces for the nougat bags.

Soft or hard nougat, plain or flavored

Depending on the type of nougat to be made, the confectioner will adapt the cooking time: it will be short for soft nougat, and longer to obtain semi-hard or hard nougat.
