Dry-cured saucisson direct from the producer: discover the finest saucissons of our terroirs

The know-how of our artisan saucisson producers comes from long years of practice, but above all from a love and a passion for the craft, learned through a traditional apprenticeship handed down from generation to generation.

The choice of ingredients, the art of cutting and mincing, drying and curing… a rigorous, time-honoured production process that gives Ardèche dry-cured saucisson all its aroma.

Dry-cured saucissons made by hand, built on the quality of the ingredients and, above all, on good company.

For us, the taste of a good dry-cured saucisson direct from the producer comes down to three key points:

  • A love of good produce and respect for local terroirs.
  • A commitment to short supply chains and close ties with farmers, guaranteeing genuine quality.
  • The passing on of age-old know-how.

La Boutique Des Saucissons invites you on a charcuterie escapade through our terroirs: Aveyron saucissons, Ardèche sausage and the deepest Cévennes.

Ardèche saucisson: the authenticity of a terroir

In Ardèche, serenity is everywhere: the murmur of the rivers, the song of the birds and the laughter of good companions sharing an artisanal Ardèche saucisson.

Between southern Ardèche and the Rhône Valley, nature is generous. The scent of the terroir can be felt throughout our production workshops.

It is in the richness and diversity of Ardèche saucissons that the strength of our farming country shows itself. Over the years we have perfected our know-how to produce one of the finest Ardèche saucissons, recognised the world over and PGI certified.

From Ardèche platters to traditional country inns and right across France, our Ardèche saucissons have built a solid reputation on a broad range of Ardèche saucissons and Ardèche sausages:

  • Ardèche dry-cured sausage PGI : Finer than its cousins and recognisable by its U shape, the Ardèche dry-cured sausage is a blend of meat and fat, left to dry for 6 to 8 weeks in our drying rooms.
  • Ardèche straight sausage PGI : Just as fine as the Ardèche dry-cured sausage, the straight sausage shares the same characteristics. Given its shape, however, it dries more quickly: in 3 to 5 weeks.
  • Ardèche dry-cured saucisson PGI : Pure pork and wonderfully tasty, the Ardèche dry-cured saucisson is made entirely by hand. Cut on the bias, its coarse-grained slices are perfect for your charcuterie boards and will delight true lovers of Ardèche saucisson.

And to carry the Ardèche tradition a little further, to all four corners of France, our Ardèche saucissons are available to buy online on our website.

Aveyron sausage: an artisanal preparation with a rustic taste

Guardian of charcuterie traditions, Aveyron shines through its regional charcuterie: generous, simple, full of flavour… just like the region itself!

Shaped by the people of the land, our Aveyron sausages embody the cultural identity of the region. A traditional product that tells part of its story.

Farmers and charcutiers from one generation to the next, our artisans are passionate about charcuterie and eager to share with you the true taste of Aveyron sausage, made exclusively from pork.

Better than anyone, these products express the authenticity of our Aveyron terroir through our range of Aveyron saucissons.
