Our Ardèche PGI dry-cured salami
Our traditional Ardèche dry-cured salami, a Protected Geographical Indication (PGI), is a premium artisan product that adheres to the traditional 1779 recipe for Ardèche sausage.
This salami is a specialty of the mountainous regions of the Ardèche in southern France, and benefits from exceptional weather conditions for natural curing and optimal preservation.
Artisan production
The salami is slowly dried (between 6 to 8 weeks) in our cellars, allowing its natural grey-green bloom to develop. We use only fresh meat of French origin and without artificial colors, which we stuff into a natural pork casing before tying it with string. All of this gives our dry-cured sausage an authentic artisan character.

Protected Geographical Indication
Our Ardèche dry-cured sausage is a typical regional product. The Ardèche is the first region to have a PGI for dry sausages. This label is a recognition of the quality of our product and our expertise.
Storage
We pay particular attention to the storage of our salami. We recommend consuming it before the recommended use-by date of 40 days. For optimal preservation, we suggest keeping our charcuterie at a temperature below 18°C. Please note that this product is subject to desiccation and may contain traces of nuts.
Ingredients
We use premium ingredients for our Ardèche salami. We simply use pork of French origin, salt, lactose, wine, dextrose, spices, and aromatic plants. We add a preservative, potassium nitrate, as well as lactic ferments, to guarantee the quality and food safety of our product. We do not use artificial colors.
