It all starts with the harvesting of chestnuts, usually done by hand in autumn. Once harvested, they are sorted to remove damaged fruits, then slowly dried in clèdes, traditional stone drying sheds typical of Ardèche. This drying process, which can last several weeks, preserves the natural aromas and nutritional qualities of the fruit.
The chestnuts are then shelled to remove their outer and inner skins, before being sorted again. Fruits with damaged kernels are not used for flour. The selected chestnuts are then finely ground with a stone mill. This process produces a flour with a smooth, homogeneous texture, retaining all the natural flavours of the fruit.
