Even if pâtés and traditional terrines delight the most gourmets in the same way during the aperitif, these two recipes have very different production methods.

The creation of the Artisanal terrine , like that of the pâté, dates back to the Middle Ages. The story begins with the pâté, this charcuterie dish that found favor in the eyes of the Roman emperors. Traditionally, the latter was cooked in a dough (hence its name). This thick crust that surrounded the stuffing was intended to preserve the pâté during cooking, transport and during its conservation.

Over the centuries, a new way of preserving food emerged: a process combining heat treatment (sterilization) and airtight packaging. This is how the artisanal terrine . As its name suggests, the old-fashioned country terrine is cooked in a clay container, of the same name. It is therefore the container that gave its name to the content, enriched with a relatively slow cooking method, in the oven. Once the country terrine cooked, it is cooled for at least a day, to be eaten cold, spread on toast or toasted bread.

Pâté and artisanal terrines come together on certain points: their gourmet stuffings can be prepared with the same basic ingredients: pork, caillettes, rabbit and other condiments...
