Terrine and pâté are both made of the same ingredients, but differ in their cooking method. The pâté was formerly cooked in the crust, while the terrine simmered in an earthenware container: these details also explain their respective names.
Today, instead of using the envelopes of yesteryear, the artisan butchers take care to select the best condiments to give a unique flavor to the terrine, while retaining its old-fashioned base. With a mixture made of cream and eggs, garlic, black pepper and cognac are added. It is therefore a subtle blend of tradition and daring which manifests itself in an explosion of flavors at the time of tasting.
