A large 100% French bridled sausage with top quality ingredients
For our sausages, we exclusively use French pork with the label . This means that the animals are born, raised and processed in France in accordance with very precise specifications and a very demanding quality charter.
The meat comes from local farms that are distinguished by responsible breeding methods. The pigs benefit from a natural diet that guarantees particularly tasty quality meat .
But that's not all. The other ingredients that go into making this big bridle are also of natural origin . Lactose helps optimize the fermentation of the sausage. The wine with the aromatic plants and the skillfully measured condiments give each piece an inimitable taste.
IGP Bridled Sausage: an artisanal product from the best of Ardèche
Once the ingredients have been carefully selected, the large brided sausage is essentially made by hand .
The noble pieces of pork are coarsely ground, then the spices are added to the mixture. Each sausage is stuffed and then hand-tied with linen thread. This string, artfully wrapped around the sausage, helps maintain its shape during the steaming process.
Artisanal production respects ancestral recipes. Today's master charcutiers, who have inherited traditional know-how, also have solid artisan training.
Due to its size, the maturation of the gros bridé takes longer. This takes about 8 weeks, during which time the product slowly develops its taste. At the end of this period, each sausage is covered with a natural blue-green flower that attests to its quality . The climate of the Ardèche, which is particularly suitable for maturing sausages, contributes to the unique flavor of this charcuterie.
A sausage that goes with all sauces...
Generous enough to share, the gros bride is ideal for aperitifs. Served with bread and pickles, or on a platter of cold meats and cheeses, it is appreciated for its authentic taste.
But this is not the only way to enjoy this excellent Ardèche sausage. Young and old will be pleasantly surprised by the GM brioche sausage that you will make with this large bridle.
You can also use it in cooking to enhance your daily preparations : in a pizza or a pasta dish, it will delight the whole family. It is also an ingredient of choice to enhance your savory cakes, gratins and other small simmered dishes. Even with leftovers, you can make good omelettes.
It is also excellent in salad or sandwich . A few slices of sausage tied in a mixture of vegetables, and you immediately get a light, tasty and nourishing dish.
