Tasting advice

1. Take out the sausage at least 15 minutes before eating it.
2. Do not hesitate to keep the skin when tasting to best appreciate this sausage.
3. Cut slices thick enough to benefit from the tenderness of the product and avoid eating it too dry to keep its tenderness.
4. Pair it with a Côtes du Rhône wine* and a slice of fresh bread.

A large, tied sausage, 100% French, with premium ingredients

For our sausages, we exclusively use certified French pork. This means that the animals are born, raised, and processed in France, following a precise set of specifications and a very demanding quality charter.

The meat comes from local farms known for responsible farming practices. The pigs benefit from a natural diet that guarantees quality, particularly flavorful meat.

But that's not all. The other ingredients used in the making of this large tied sausage are also natural. Lactose optimizes the sausage's fermentation. The wine, along with expertly measured aromatic herbs and condiments, gives each piece an inimitable taste.

IGP tied sausage: an artisanal product from the best of Ardèche

Once the ingredients are carefully selected, the large tied sausage is essentially made by hand.

The prime cuts of pork are coarsely chopped, then spices are added to the mixture. Each sausage is stuffed and then tied by hand with linen thread. This string, artfully wrapped around the sausage, helps maintain its shape during the drying process.

The artisanal manufacturing respects ancestral recipes. Current master charcutiers, who have inherited traditional expertise, also have solid artisan training.

Due to its size, the maturation of the large tied sausage takes longer. This takes approximately 8 weeks, during which the product slowly develops its flavor. After this period, each sausage is covered with a natural blue-green mold that attests to its quality. The Ardèche climate, which is particularly conducive to sausage ripening, contributes to the unique flavor of this charcuterie.

Generous enough to share, the large tied sausage is ideal for aperitifs. Served with bread and pickles, or on a platter of cured meats and cheeses, it is appreciated for its authentic taste.

« Bridé » désigne un saucisson ficelé à la main selon un bridage traditionnel. La différence entre le gros et le petit bridé tient essentiellement à la taille : le gros bridé offre un format généreux de 480gr, tandis que le petit bridé est plus petit (280gr) et plus corsé en goût grâce à du poivre en grain et l'utilisation de vin rouge St Joseph.
