A key food of Hispanic gastronomy, the traditional chorizo can be enjoyed in slices as an aperitif or cooked to enhance the taste of dishes and bring sunshine to your plates.
Traditionally made from pork meat, chorizo from the Boutique des Saucissons is made in the same way as a pure pork dry sausage. It is the addition of spices such as chili that gives it its warm rust color and authentic flavor.

High-end chorizo: a taste of Spain in the heart of Ardèche!
Convinced that there can be no good artisanal chorizos without good products, we are committed to controlling the product from its origin to its marketing. The raw materials used in the manufacture of our range of chorizos come from French and sustainable breeding. We select 100% pure pork meat, coupled with artisanal production to give birth to chorizos hand-embossed and refined in our natural air dryers for 3 to 5 weeks.
Our pork meat artisanal chorizo is ground before being mixed manually with chorizo spices, which give it its spicy and perfectly balanced taste. The dosage of spices is skillfully calibrated so that the taste of the spices persists while preserving the good taste of the meat.
Artisanal chorizo: how to store it properly?
Kept in the open air, the chorizo can dry quickly.
Just like for dry cured meats, the ideal is to store it in a cool, dry and ventilated place at around 15°C: garage, storeroom, cellar, basement, etc. You will be able to keep your artisanal chorizo about sixty days.
How to choose your chorizo?
In our online store, chorizo is available in all its forms:
- Mild chorizo : at a level of 1.46% of peppers, the mild chorizo from the Boutique des Saucissons will subtly awaken its slightly spicy aromas.
- Strong chorizo and extra strong chorizo : ranging from 1.82% to 2.36% of peppers, the strong chorizos and extra strong chorizos are spicy, but not too much... so as not to mask the good taste of the fresh meat!
- Chorizo flavored with olives : a beautiful combination of fruity flavors that will tickle your taste buds!

Traditionally eaten raw in slices, chorizo is a product that is easy to consume, both as an aperitif and in hot dishes.
Homemade chorizo eaten as an aperitif
Traditional chorizo is simply eaten in thin slices, as an aperitif. But, it can also be offered as a base for several cold preparations such as:
- Chorizo spreads : a mixture of fresh cheese and chorizo to create a fresh chorizo spread, similar to rillettes. Spread on bread and enjoy without delay!
- Chorizo and fresh goat cheese tapas : a slice of bread decorated with a dice of traditional chorizo , a square of goat cheese and a black olive: that's it!
- Recipe chorizo and dried tomato cake : a creamy blend of dried tomatoes and chorizo.
Chorizo in hot dishes!
In the kitchen, the chorizo rhymes with warmth and conviviality! In addition to the essential paella or tortilla, the chorizo can also be used in all kinds of hot or cold dishes, to enhance their taste: be creative!
Chorizo goes very well with scallops, in a lightly perfumed sauce. To continue this land and sea association, the chorizo goes wonderfully with fish such as monkfish, cod or julienne.
Cut into more or less thick slices, the traditional chorizo must be seared very quickly so as not to alter its taste. It can also be cooked on the barbecue or on the griddle on summer evenings.
