Ingredients for chorizo cake
For 6 people:
- salt and pepper
- 12.5 cL of milk
- 200 grams of flour
- 3 eggs
- 1 sachet of baking powder
- 100 grams of grated cheese (Comté, Emmental or any other idea)
- 150 grams of dried tomatoes
- 1 red pepper
- 1 sprig of thyme
- 10 cL of olive oil
- 1/2 artisanal chorizo (mild, strong or extra strong depending on your preference) - find our artisanal chorizos
- Very easy

Preparation of the chorizo, sun-dried tomato and cheese cake
- Preheat your oven to 180°C.
- In a saucepan or in the microwave, warm the milk. Meanwhile, cut the chorizo and dried tomatoes into small cubes.
- In a bowl, whisk the eggs. Gradually add the flour and baking powder. Gradually add the oil and warm milk. Stir until you obtain a smooth, lump-free dough.
- Wash the pepper and place it in the oven for a few minutes - this will make it easier to remove the skin. Then cut it into thin strips.
- Add the pepper and cheese to the previously prepared dough. Season to taste without forgetting the sprig of thyme - thanks to it, you will travel until you hear the cicadas!
- Butter a cake tin and pour the mixture into it. Bake for 45 min at 180°C and leave to cool before serving.
- Serve as an aperitif, starter or main course, possibly accompanied by a green salad.

For die-hard goat cheese lovers, replace or add (for even more sweetness...) fresh (or not) goat cheese cut into pieces.
Small cubes of zucchini can also add color to this recipe!
