A pure pork Corsican sausage
Corsican charcuterie is originally made using “nustrales” pork, a breed endemic to the island. The animals were raised in semi-freedom in the maquis, presenting a very special taste and aroma thanks to a food composed partly of chestnuts, acorns and fresh grass.
In accordance with this tradition, we exclusively use pork meat from responsible farms.
Traditional manufacturing by qualified craftsmen
Our master charcutiers respect an artisanal process with natural products in order to give you a taste of authentic Corsican sausage, pure smoked pork:
- 1st choice meat from the noble parts of the pig;
- Traditional hand embossing in natural casings;
- Hand tying with twine;
- Old-fashioned smoking over a chestnut wood fire.
Gently steamed, then left to dry slowly in the natural air, each sausage takes time to mature. With carefully measured spices, it develops its flavor over the weeks. Furthermore, our pure Corsican pork sausage is lightly smoked, in accordance with the traditional recipe. This step gives it a characteristic smell which mixes with the woody scent of our artisanal sausages.
A transport that preserves all the qualities of Corsican sausage
With pure smoked Corsican pork sausage, you will notice a beautiful dark color resulting from smoking. The sausage can be soft or dry, depending on the drying desired. And finally, each piece gives off a unique and appetizing scent.
These qualities remain intact during transport thanks to the use of ecological fiber cushioning. The sausages are therefore perfectly preserved during the journey between our dryers and your table. Furthermore, picked only before shipping, the sausages have a maximum shelf life (BBD).
