Chestnut breaks (also called chestnut breezes or bulgur) are chestnuts that are dried and then crushed. They are originally the ancient cereals of Ardèche before the arrival of wheat. Nowadays, they are used as an accompaniment to meat or fish.
They are delicious as an accompaniment to a slow-cooked meat dish. The challenge of cooking with broken pieces is to successfully rehydrate them. It is therefore possible to soak them beforehand, like legumes, in order to reduce their cooking time. They can also be added at the beginning of cooking a vegetable soup, in order to thicken it.
