Eggplant caviar, a Mediterranean recipe

Eggplant puree or caviar is a preparation found throughout the Mediterranean basin. In the south of France, it is also called " merenjainade ".

The eggplant is a fruit vegetable originating from Asia, which was first domesticated in India, China and Indonesia. It was introduced to the Mediterranean by the Arabs, and was a popular vegetable in Andalusia in the Middle Ages. While the eggplant has been commonly eaten in the South of France for centuries, its popularity in the north of France is more recent. It was only in the 19th century that it arrived on the Parisian markets, brought back from Provence by the greengrocer, Mr. Découflé.

There are also several variations of eggplant caviar in different countries of the Mediterranean and the Middle East, such as Lebanese moutabal , Turkish patlican salatasi or Jordanian baba ganoush . These recipes are prepared using the same basic ingredients.

What are the ingredients in eggplant caviar?

The classic recipe contains eggplant puree, garlic, olive oil and condiments. These elements give the preparation a delicious sunny taste that recalls the South, the mountains and the sea.
