Chestnut spread was invented by Clément Faugier in 1885 in his factory in Privas. At the time, it was used to salvage broken candied chestnuts, but later the spread became a recipe in its own right. The product is made from large cooked and kneaded chestnuts, to which sugar, confit syrup, and natural Madagascan vanilla are added.

"La crème de marrons d’Ardèche" (Ardèche chestnut spread) has been a registered trademark since 1924. The product is made from AOP Ardèche chestnuts.

Marrons (sweet chestnuts) are the fruits of the chestnut tree, with an uncompartmented kernel (châtaigne refers more to the fruit with two kernels, but from the same tree). And Ardèche has been the leading national producer of sweet chestnuts for over a century, supplying half of the French harvest.
