Anchovy paste, a Provençal specialty with a taste of sunshine
Traditionally associated with the warm season, anchoïade brings a little summer flavor to our plates. A specialty of the Midi region and the Mediterranean, it evokes summer holidays, the sea, and the singing of cicadas.
It is prepared using anchovies from which the heads and bones are removed. The fish is marinated with various condiments and spices, particularly capers and garlic, which enhance its beautiful sunny flavor. The mixture is bound with olive oil, a key ingredient in Mediterranean specialties.
With this anchovy delight, you have an excellent artisanal recipe, a true concentrate of flavors that will surely amaze you. It can be enjoyed in a thousand ways, as an appetizer, starter, or main course.
How to enjoy the anchovy delight?
Anchovy paste is perfect for appetizer toasts and for filling bread during a cold meal, especially at a picnic.
You can also serve it with raw vegetables: carrot sticks, celery hearts, cucumber, radishes, bell pepper, or even endive leaves served with hard-boiled eggs, and dipped in the sauce before savoring. It's an excellent way to enjoy a vitamin-rich aperitif, instead of the usual unhealthy chips. If you don't like raw vegetables, try blanched leek whites, asparagus, or cauliflower.
As a starter, anchovy paste pairs very well with a carpaccio of young zucchini and integrates deliciously into a bruschetta. For a light surf-and-turf meal, serve the anchovy delight with a beef carpaccio and fennel salad flavored with chili and peanuts. Anchovy paste also marries deliciously with burrata. Finally, if you're looking for an express recipe, prepare red mullet fillets served on a bed of anchovy paste, accompanied by a mixed salad for a good, flavorful, and balanced meal.
The anchovy delight is also a choice ingredient for a gourmet and quick snack. Spread it on a crouton or a slice of bread that you grill on the crust side. You will get a toast with an ordinary appearance but an exceptional taste.

The anchovy paste can is easy to store: simply keep it in a cool, dry place, such as a pantry or cupboard. You can therefore keep several cans in anticipation of aperitifs and small hunger pangs.
