Chestnut flour: the ingredient that makes all the difference

The macaron is a cake made from almond paste, egg white and sugar , and which does not contain flour. It is both grainy and chewy and often served topped with ganache.

Our macarons follow the traditional recipe, but in addition to almonds, they contain chestnut flour. This emblematic fruit of the Ardèche gives the cake a delicious hazelnut scent.

PDO chestnut flour comes from controlled plantations where carefully selected varieties grow, and the trees do not undergo any chemical treatment. The making of the flour itself respects precise specifications, with an artisanal process.

The Joyeuse macaron, a small Ardèche cake dating from the 16th century

History gives this pastry an Arab origin ; it would have arrived in France during the Renaissance period. The Joyeuse macaron recipe is among the oldest preserved. This pastry was part of the menu at the wedding of the Duke of Joyeuse and today, this village in Ardèche gives its name to a macaron which is distinguished by its entirely crunchy texture.

We offer Joyeuse macarons conforming to the original recipe, adding chestnut flour to accentuate the taste of the terroir.
