The mini sausage was prepared in an artisanal way by passionate master butchers. Thanks to the climate of Ardèche, particularly favorable to drying sausage, it develops a unique taste and texture. Indeed, the mountain air and generally mild weather ensure slow maturation. The meat has time to release all its flavor, and to soak up the aroma of the herbs.

Just as sausage acquires its distinctive taste in the Ardèche region, Cantal owes its originality to the terroir that produced it. This cow's milk cheese, known for its buttery flavor and light nutty taste, has had a Protected Designation of Origin (PDO) for decades. This label means that the cheese comes from a well-defined region. In this case, the center of the Auvergne Rhône-Alpes region.

The mini Cantal sausage is therefore the ideal product for an aperitif with a taste of the South , because it combines all the know-how of the region's artisans.

A 100% French sausage, natural and with perfect traceability

We prepare our sausages with meat labeled French Pork . It comes from animals born, raised and processed in France, who lived on responsible farms. Their breeding took place with respect for the environment and natural cycles, with a sustainable approach. The food and care given to the animals follow strict specifications.

Thus, the quality of the mini Cantal sausage is based both on its artisanal preparation in the Auvergne region, and the very origin of the meats used. Our master pork butchers exclusively use the noble cuts of pork, which are coarsely ground and then stuffed into natural casings . The latter, supple and edible, add to the flavor of the product.
