Much more than just a charcuterie, dry sausage with walnuts is a unique taste experience. The salty taste of the meat, enhanced by spices and maturing, blends with the buttery and fruity flavor of the walnut to offer you a pure moment of delight.
Walnut sausage, an Ardèche delicacy par excellence
An archaeological dig has found an 8 million year old nut in Ardèche, probably making this region the birthplace of this dried fruit. Temporarily disappeared and then reintroduced, walnut trees grow mainly in the Périgord and the Dauphiné region, near Avergne-Rhône Alpes. These two territories are the origin of French AOP walnuts (Grenoble and Périgord walnuts) .
This fruit is therefore sustainably rooted in the Ardèche region, just like the region's traditional dry sausages. With local walnut kernels, 100% French pork and ancestral know-how in charcuterie, our artisans have developed an exceptional walnut sausage, which concentrates all the flavor of the terroir.
Authentic ingredients and artisanal production
To make our dry sausages, we exclusively use meat labeled "French Pork" which therefore comes from animals born, raised and processed in France. They have been subject to rigorous care and an organic diet in order to meet the requirements of the specifications and produce excellent quality meat. We source our products from responsible farms located in Rhône-Alpes or Brittany, ensuring flawless traceability for all our products.
The sausage is made by hand . The walnut kernels in pieces are added to the mixture after seasoning, then everything is stuffed into natural casings. The sausages thus made are put to steam in a place with a controlled environment, in order to remove excess water without drying out the meat. It is then left to mature in the natural air for several weeks. It then develops all its flavor, mixing the taste of the meat with that of the nuts. When the sausage is ready, it has a grayish-green flower. This natural casing comes from fermentation, it attests to the maturity of the sausage and contributes to giving it its authentic taste.

In addition to its unique flavor, walnut sausage also has a very interesting nutritional aspect. Walnuts, rich in omega 3, contain good fats that fight bad cholesterol. Mixed with meat, they provide a nice balance. Moreover, walnut oil is well known in terms of dietetics. For a dish that is both light and tasty, you can incorporate slices of sausage into your raw vegetable salads. Served with chestnut flour bread, all this will constitute a complete meal with the flavors of Ardèche.

And of course, walnut and hazelnut sausage is a perfect addition to pizzas, quiches and pasta dishes , to the delight of young and old.
