Traditional crepe batters are often made with only wheat flour , requiring flavorings like rum to enhance their taste. With our chestnut flour preparation, you immediately get a slightly sweet batter , with a delicate autumn scent.

This AOP flour comes from Ardèche chestnut groves, carefully cultivated for generations. Its natural aroma goes wonderfully with honey , cinnamon and of course, chocolate . You can use them as a flavor as well as a filling. In addition, the dough will certainly suit you if you want to reduce your gluten consumption.

How to make pancake batter with this preparation?

Here are the steps to follow to prepare your pancake batter:

-          Put the chestnut flour mixture in a large salad bowl.

-          Dig a well and break 5 eggs into it.

-          Mix gently, then gradually add 1 L of milk while continuing to mix.

This gives you an ideal crepe batter, neither too liquid nor too thick . It's a quick recipe, which doesn't need any resting time: you can start cooking it straight away.

To know if your pan is at the right temperature, throw a few drops of water in it: if they form small bubbles and bounce, it's time! Cook the pancakes for 30 seconds on each side : they will be soft and delicious. Be careful not to overcook them, otherwise they will become too dry, especially on the edges.

If you are cooking a lot of pancakes, place them in a dish that will itself be placed above a bowl filled with hot water to keep them at the right temperature.
