This “French pork” labeled sausage is made from premium quality meat. It comes from pigs born, raised and processed in France, particularly in the Rhônes-Alpes region. The animals were fed healthily on responsible farms.


The same goes for goat cheese, an emblematic product of Ardèche. In our region, goats benefit from a particularly favorable diet and climate. The cheese is made by artisans who love the region and are passionate about their profession.


We select these ingredients directly from these local producers to ensure their quality and manufacturing processes. This is how we manage to create such a succulent goat's cheese sausage, with meat with a good marbled taste and a creamy cheese as desired . All this richness is fully expressed once the sausage is matured. Once ripe, it is a real concentrate of flavors, with an irresistible texture.


Artisanal know-how and traditional recipes


With these carefully selected ingredients, our master butchers prepare the sausages based on Ardèche tradition. All the work is done by humans, from picking the pieces to preparing the scrum to monitoring the hash.


The cheese is added during the stir, along with the spices. These are natural ingredients , we do not use any flavor enhancers or chemical additives in our sausages. The meat is then stuffed into natural casings, which is why the contours of each sausage remain irregular. Finally, each piece is tied by hand with linen thread.


The goat cheese sausages are then steamed, then matured for several weeks.
