A simple recipe, a true taste

Our pure pork salami is prepared with fewer than five ingredients:

  • 100% French fresh pork

  • Salt

  • Ground pepper

  • Garlic (depending on recipe)

  • Natural casing

No artificial colors, no artificial preservatives. Everything is hand-stuffed into a natural casing, then aged for several weeks in naturally ventilated cellars, promoting the development of a natural bloom – a sign of quality and maturity.

Qu'est-ce qui caractérise le saucisson pur porc des Cévennes ?

Un saucisson artisanal 100 % pur porc issu du cœur des Cévennes, élaboré à partir d'une viande rigoureusement sélectionnée et fabriqué selon des traditions ancestrales. Il séduit par sa saveur franche et son équilibre entre maigre et gras.

Que signifie saucisson "Pur Porc" ?

« Pur porc » signifie que le saucisson est élaboré uniquement à partir de viande de porc, sans mélange avec une autre viande (bœuf, volaille, etc.). De plus, le saucisson doit contenir au moins 80% de viande maigre de porc. C'est un gage d'authenticité et de tradition charcutière : chez nous, cette viande est de surcroît 100 % française.

Quelle différence entre le saucisson IGP Ardèche et le saucisson des Cévennes ?

Le saucisson IGP Ardèche bénéficie d'une Indication Géographique Protégée : origine et fabrication en Ardèche selon un cahier des charges précis et la recette traditionnelle de 1779. Le saucisson pur porc des Cévennes, lui, est un 100 % pur porc issu du terroir voisin des Cévennes, avec le même savoir-faire artisanal mais sans le label IGP. La différence tient donc surtout à la zone d'origine et à la certification. Une autre différence : le poids. Le saucisson d'Ardèche fait 230gr alors que le saucisson pur porc des cevennes fait 170gr.
