A large, tied saucisson, 100% French, with premium ingredients
For our saucissons, we exclusively use certified French pork. This means that the animals are born, raised, and processed in France, following a precise set of specifications and a very demanding quality charter.
The meat comes from local farms known for responsible farming practices. The pigs benefit from a natural diet that guarantees quality, particularly flavourful meat.
But that's not all. The other ingredients used in the making of this large tied saucisson are also natural. Lactose optimises the saucisson's fermentation. The wine, along with expertly measured aromatic herbs and condiments, gives each piece an inimitable taste.
PGI tied saucisson: an artisanal product from the best of Ardèche
Once the ingredients are carefully selected, the large tied saucisson is essentially made by hand.
The prime cuts of pork are coarsely chopped, then spices are added to the mixture. Each saucisson is stuffed and then tied by hand with linen thread. This string, artfully wrapped around the saucisson, helps maintain its shape during the drying process.
The artisanal manufacturing respects ancestral recipes. Current master charcutiers, who have inherited traditional expertise, also have solid artisan training.
Due to its size, the maturation of the large tied saucisson takes longer. This takes approximately 8 weeks, during which the product slowly develops its flavour. After this period, each saucisson is covered with a natural blue-green mould that attests to its quality. The Ardèche climate, which is particularly conducive to saucisson ripening, contributes to the unique flavour of this charcuterie.
A saucisson that goes with everything...
Generous enough to share, the large tied saucisson is ideal for aperitifs. Served with bread and pickles, or on a platter of cured meats and cheeses, it is appreciated for its authentic taste.
But that's not the only way to enjoy this excellent Ardèche saucisson. Young and old alike will be pleasantly surprised by the GM brioche saucisson you can make with this large tied saucisson.
You can also use it in cooking to enhance your daily preparations: in a pizza or a pasta dish, it will delight the whole family. It is also a choice ingredient to accompany your savoury cakes, gratins, and other simmered dishes. Even with leftovers, you can make delicious omelettes.
It is also excellent in salads or sandwiches. A few slices of tied saucisson in a vegetable mix, and you immediately get a light, tasty, and nutritious dish.
Don't forget to stock up in time when a piece is about to run out. Our saucissons are delivered within 24 to 48 hours.
