Chatus Rouge: The Ardéchois grape with character, between authenticity and aging potential
From the heart of the Côtes du Vivarais, on the limestone plateau of Les Gras at an altitude of 250 m, this red Chatus is a tribute to the winemaking heritage of Ardèche. Grown on rare and demanding soils, it expresses all the typicity of a powerful and singular local grape variety.
A deep and promising red terroir wine
The Chatus from Domaine Les 7 Pierres reveals a slightly animal nose, blended with notes of small black fruits and leather. On the palate, its still slightly rustic tannic structure suggests a good aging potential, while offering remarkable authenticity today. A sincere, refined tasting wine, to be paired with sauced meats, game, or local dishes.
Traditional winemaking to preserve the identity of the grape variety
Harvested by hand, the Chatus undergoes a long maceration (20 to 30 days) to structure the wine, before aging for 10 to 15 months in enameled steel tanks, in order to preserve the purity of the fruit and the tension of the terroir.
