Our artisan Comté cheese salami is a dry-cured sausage made in our own workshop in Joyeuse, from the Ardèche in southern France. Cellar-aged Comté brings a bold, lightly fruity note to the mellow bite of a traditional French salami — real mountain charcuterie with a cheese that holds its own.

Made the way it has always been made

We start with rigorously selected French pork, minced and seasoned with care. The Comté goes in as pieces: it is worked into the sausage, not packed separately, so the cheese is there in every slice. The mix is then filled into a natural casing and slowly air-dried in the open air, which gives it an even maturation and a tender texture.

Yes, entirely normal. The Comté is added in pieces to the mix and then spreads naturally, unevenly, through the saucisson: from one slice to the next you will therefore find sometimes more, sometimes less cheese. That is the signature of artisan making, with no standardised distribution — and the taste of the Comté runs right through the saucisson
